These Artisan Tortelloni are hand folded one by one to incorporate more filling. The pasta has a very high Free Range egg percentage (30%) and uses a special blend of 00 and Durum Wheat flour so that the pasta holds the cooking very well. The filling is made with lots of varieties of mushrooms, Italian Porcini included. Fresh parsley and Italian hard cheese are added to enhance the flavour. They are best served with extra virgin olive oil or with a light tomato sauce and a generous sprinkling of parmesan cheese.
